Cake mix cookies

I found a recipe for cake mix cookies on one of those "10 DIY Food Hacks YOU NEED RIGHT NOW" lists and it just sounded to good to be true. Cookies in 20 minutes? I just didn't know about that.
But it works. I made cake mix cookies at home and then again in the Test Kitchen because I was so impressed with them. They're really good - especially the chocolate ones! The texture is great - they're not as dense as normal cookies, and the middles are nice and soft.
One box of cake mix is enough to make 24 cookies - enough to satisfy even the strongest of sweet tooths. :D

Step 1: Ingredients:

∆ 1/2 cup vegetable oil
∆ 2 eggs
∆ one 15 oz box cake mix
And that's it! Super easy.
For maximum convenience, I recommend using 2 baking pans so you can cook them all at one time. 
Choose a tin to suit your own baking style, whether it be a mini muffin tin or an 8" square tin.

Step 2: Mixing the dough

Preheat your oven to 350 F.
Empty the cake mix into a large bowl. Measure out 1/2 cup vegetable oil and crack the eggs into it - beat with a fork until nice and yellow. :)
Pour the oil/egg mix into the dry and mix it well with a spatula. It'll take a bit of stirring to come together - make sure there are no dry spots left! The dough will be fairly stiff and glossy.

Step 3: Measuring out the dough

Use a tablespoon measure and scoop the dough onto baking sheets. A normal box of cake mix will give you 24 cookies - do 12 on each baking sheet.


Step 4: Baking!

Bake the cookies for 12-14 minutes at 350 F. They will be puffy and look like they're not done when they first come out of the oven, but will flatten and firm up as they cool. They should be nicely browned on the bottom but stay light on top.
They dry out super fast if you keep them in the oven too long, so be careful.

  1. What you're saying is completely true. I know that everybody must say the same thing, but I just think that you put it in a way that everyone can understand. I'm sure you'll reach so many people with what you've got to say.
